Iberian ratatouille with brie cheese toast
- Some slices of Ciabatta bread (North Italian art of bread with more crust than crumb)
- 1 green pepper
- 1 chopped onion
- 1 courgette
- Garlic
- 1 full grown tomato
- Small cubes of smoked ham and highly-seasoned pork sausage.
- Some brie cheese
Put some oil in a pan, add the garlic clove, and the chopped onion and lightly fry (about 5 minutes).
Chop the green pepper and courgette. Add and lightly fry for another couple of minutes. Add the tomato and cook for 10 minutes. Season with a pinch of salt (if needed).
Finally add ham and pork sausage, and leave long enough to release in their flavour.
Toast some slices of ciabatta bread.
Spread some of the ratatouille in each toast. Place a couple of brie cheese slices on top, and put in a preheated oven until cheese melts. Ready to eat.
